Recipes:

2 medium sweet potatoes, peeled and cubed
3 cups fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/4 cup grated Parmesan cheese
1/4 cup milk (any type of your choice)
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons olive oil
1 tablespoon fresh thyme (optional)
1 tablespoon fresh parsley, chopped (for garnish)
Directions:
Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
In a large pot, bring water to a boil and cook the sweet potatoes for 8-10 minutes, or until fork-tender. Drain and set aside.
In the same pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped spinach and cook until wilted, about 2-3 minutes.
In a large mixing bowl, combine the cooked sweet potatoes, sautéed spinach, feta cheese, Parmesan cheese, garlic powder, onion powder, black pepper, salt, and
milk. Mix well.
Transfer the mixture into the greased baking dish. Drizzle with the remaining olive oil and top with fresh thyme if desired.
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley.
