Recipes:

For the Salad:
8 oz halloumi cheese, sliced
3 cups watermelon, cubed
1/4 cup fresh mint leaves, chopped
1/4 cup red onion, thinly sliced
1/4 cup toasted walnuts or almonds (optional)
For the Dressing:
2 tbsp balsamic glaze
1 tbsp olive oil
1/2 tsp black pepper
Directions:
Heat a grill pan or skillet over medium-high heat.
Grill the halloumi slices for 1-2 minutes per side until golden brown and slightly crispy. Remove and set aside.
In a large bowl, combine watermelon cubes, mint, red onion, and nuts (if using).
Arrange grilled halloumi over the salad.
Drizzle with balsamic glaze, olive oil, and black pepper.
Serve immediately and enjoy!
