Easy Halloumi Fajitas

These Easy Halloumi Fajitas are a perfect meat-free twist on a classic Mexican dish! Originating from Cyprus, halloumi is a semi-hard cheese that shines in these fajitas with its salty flavor and firm texture. Oven-baked with colorful bell peppers, onions, and our homemade fajita seasoning, this recipe is ready in under 30 minutes. Serve it in soft tortillas with your favorite toppings like guacamole, salsa, or sour cream for a zesty, cheesy delight!

1 Onion, thinly sliced
2 Red bell peppers, sliced
1 Green bell pepper, sliced
250 g (9 oz) Halloumi, cut into strips
2 tbsp Olive oil
4 tbsp Fajita seasoning
4 Soft tortillas

Directions:
1. Preheat oven to 200°C/180°C(fan)/400°F/Gas 6.
2. Add onion, peppers, halloumi, olive oil, and fajita seasoning to a baking dish. Mix well.
3. Bake for 25 minutes.
4. Serve in tortillas with refried beans, salsa, guacamole, and tortilla chips.
