Crispy Chickpeas and Halloumi with Greens

This dish takes inspiration from Middle Eastern flavors and brings a delightful twist by using fried halloumi instead of meat. The halloumi’s crispy exterior and creamy interior, paired with spicy, crispy chickpeas, creates a texture and flavor combination that’s sure to impress. The garlicky yogurt and wilted greens tie everything together, making this a wholesome, delicious meal perfect for a weeknight dinner!

1 cup Greek yogurt
1 garlic clove, grated
1 tbsp lemon juice
1 lb halloumi, sliced
1 bunch Swiss chard
6 tbsp olive oil
4 cups cooked chickpeas
3 garlic cloves, minced
1 tsp cumin seeds
1 tsp crushed red pepper flakes
Salt and black pepper

Directions:
1. Mix yogurt, garlic, lemon juice, salt, and pepper. Set aside.
2. Fry halloumi until browned, set aside.
3. Sauté chickpeas with garlic, cumin, and red pepper until crispy.
4. Sauté chard until wilted. Mix with chickpeas.
5. Serve topped with halloumi and yogurt.
