1 kg (2 lb) butternut squash, diced
4 cloves garlic, minced
500 ml (2 cups) vegetable stock
100 g (1 cup) Grana Padano, grated
500 g (1 lb) penne pasta
1 tbsp olive oil
Directions:
1. Cook penne pasta as per package instructions, drain, and set aside.
2. Sauté garlic in olive oil until fragrant. Add diced butternut squash and cook until golden, about 5 minutes.
3. Pour in vegetable stock, bring to boil, then simmer until squash is tender, 15-20 minutes.
4. Blend squash until smooth, adding stock as needed for desired consistency.
5. Stir in grated Grana Padano and toss with cooked pasta. Serve hot.
