Halloumi Tray Bake with Pesto Rice & Roasted Vegetables
This hearty vegetarian tray bake is a celebration of flavors! Featuring caramelized roasted sweet potato, mushrooms, peppers, and balsamic onions, all paired with delicious pesto rice and topped with crispy, squeaky halloumi, this dish is perfect for when you want a comforting yet simple dinner. 2 medium sweet potatoes, cut into rounds
1 red pepper, sliced
150g mushrooms, sliced
1 red onion, cut into wedges
2 Tbsp olive oil
1 Tbsp balsamic glaze
150g cherry tomatoes
250g prepared rice
3 Tbsp pesto
225g halloumi cheese, sliced
Directions:
1. Preheat oven to 200°C/390°F. Roast sweet potatoes for 20 mins.
2. Add other vegetables, drizzle with oil and balsamic, roast 30 mins.
3. Mix pesto with rice, add to vegetables. Top with halloumi, grill until crispy.
