2 tbsp vegetable oil
1 large onion, finely chopped
2 cloves garlic, minced
1-inch ginger, minced
2 tomatoes, chopped (or 1 can diced tomatoes)
2 tbsp curry powder
1/2 cup creamy peanut butter
1 can (14 oz) coconut milk
1 cup vegetable broth or water
1 tsp chili powder
Salt to taste
Fresh cilantro (optional)

Directions:
1. Sauté onion, garlic, and ginger in oil.
2. Add spices, tomatoes, peanut butter, coconut milk, and broth.
3. Simmer for 10-15 mins.
4. Season and serve with rice or naan.
