1½ lbs chicken breast, diced
1 tsp kosher salt
1 tsp smoked paprika
1 tsp dried oregano
½ onion, minced
3 garlic cloves
1 tsp fresh grated ginger
¼ cup chicken broth
1¼ cups light coconut milk
1 tbsp tomato paste
3 cups cooked jasmine rice
Fresh cilantro

Directions:
1. Season chicken with salt, paprika, and oregano.
2. Cook in skillet over high heat, remove, then add aromatics.
3. Make sauce with broth, coconut milk, and tomato paste.
4. Return chicken, simmer, and serve over rice with cilantro.
