Garlic Parmesan Stuffed Bell Peppers

Ingredients

4 large orange or yellow bell peppers, halved and seeded
1 cup cooked rice or quinoa
1/2 cup diced yellow bell pepper (from the tops)
1/2 cup diced onion
2 cloves garlic, minced
1/2 cup breadcrumbs (panko or regular)
1/4 cup grated Parmesan cheese + 2 tbsp for topping
1 tbsp olive oil
1 tsp dried Italian herbs
Salt and pepper to taste
Fresh parsley for garnish
Directions

Prepare the Bell Peppers: Preheat oven to 375°F (190°C). Arrange bell pepper halves in a baking dish and set aside.
Sauté the Filling: Heat olive oil in a skillet over medium heat. Sauté onion and garlic until softened. Add the diced bell pepper, cooked rice or quinoa, Italian herbs, salt, and pepper. Mix in 1/4 cup Parmesan cheese and cook for 2 minutes.
Stuff the Peppers: Spoon the mixture into each bell pepper half.
Prepare the Topping: In a small bowl, mix breadcrumbs with 2 tbsp Parmesan cheese. Sprinkle the mixture generously over the stuffed peppers.
Bake: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the tops are golden and the peppers are tender.
Serve: Garnish with fresh parsley and serve warm.
