Cheesy Broccoli Stuffed Baked Potatoes

Ingredients

4 large russet potatoes
1 cup broccoli florets, chopped
1/2 cup sour cream
1/4 cup milk
2 tbsp unsalted butter
1 1/2 cups shredded cheddar cheese (divided)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions

Bake the potatoes:

Preheat oven to 400°F (200°C). Scrub potatoes, pierce with a fork, and bake directly on the oven rack for 50-60 minutes, until tender.
Prepare the filling:

While the potatoes bake, steam the broccoli florets until tender (about 4-5 minutes).
Hollow out the potatoes:

Once baked, slice the potatoes lengthwise and carefully scoop out the flesh into a mixing bowl, leaving about 1/4-inch of potato around the skin.
Mix the filling:

Mash the potato flesh with sour cream, milk, butter, 1 cup of cheddar cheese, and steamed broccoli. Season with salt and pepper to taste.
Stuff and top:

Fill each potato skin with the mashed mixture. Sprinkle the remaining 1/2 cup cheddar cheese on top.
Bake again:

Place the stuffed potatoes on a baking sheet and bake at 375°F (190°C) for 15-20 minutes, until the cheese is melted and bubbly.
Garnish and serve:

Sprinkle with fresh parsley and serve warm!
