Mediterranean Quinoa Salad
Ingredients
1 cup cooked quinoa
1 cup diced cucumber
1 cup diced tomatoes
1/4 cup red onion, thinly sliced
1/2 cup canned cannellini beans, rinsed and drained
1/4 cup crumbled feta cheese
1/4 cup fresh basil leaves, chopped
For the Dressing:
3 tbsp olive oil
2 tbsp lemon juice
1 clove garlic, minced
1/2 tsp dried oregano
Salt and pepper to taste
Directions
In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, cannellini beans, and fresh basil.
In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
Pour the dressing over the quinoa mixture and toss until everything is evenly coated.
Sprinkle crumbled feta cheese on top before serving.
