Ingredients

For the Steak:

1 lb flank steak or skirt steak

2 tbsp olive oil

1 tsp chili powder

1 tsp garlic powder

1 tsp cumin

Salt and pepper to taste

1 tbsp lime juice

For the Tacos:

6 small tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small red onion, diced

1 bunch cilantro, chopped

Lime wedges

For the Sauce:

½ cup sour cream

2 tbsp mayonnaise

1 tsp lime juice

1 tbsp fresh cilantro, chopped

Salt and pepper to taste

Instructions

Prepare the Steak: Preheat your grill or skillet to medium-high heat. Rub the steak with olive oil, chili powder, garlic powder, cumin, salt, and pepper. Grill or sear the steak for 4-5 minutes on each side for medium-rare, or longer for your preferred doneness. Let the steak rest for a few minutes, then slice it thinly against the grain.

Make the Sauce: In a small bowl, mix together sour cream, mayonnaise, lime juice, cilantro, salt, and pepper until smooth. Adjust the seasoning to taste.

Assemble the Tacos: Warm the tortillas in a skillet or on the grill for 30 seconds on each side. Place a few slices of steak on each tortilla, then sprinkle with a mix of shredded cheddar and mozzarella cheese. Return the tacos to the skillet and cook for another 1-2 minutes, or until the cheese is melted and the tortillas are crispy.

Top and Serve: Top the tacos with diced red onion and fresh cilantro. Serve with lime wedges on the side and drizzle with the prepared sauce.
