Hearty Beef and Barley Soup
Ingredients
1 lb beef stew meat, cut into bite-sized pieces
2 tbsp olive oil
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1/2 cup pearl barley
6 cups beef broth
1 can (14 oz) diced tomatoes
2 tsp dried thyme
1 bay leaf
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Directions
Sear beef: Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
Sauté aromatics: In the same pot, add onion, carrots, celery, and garlic. Cook until softened (about 5 minutes).
Add broth and barley: Stir in beef broth, diced tomatoes, thyme, bay leaf, and pearl barley. Return beef to the pot.
Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours, stirring occasionally, until beef is tender and barley is cooked.
Season and serve: Adjust seasoning with salt and pepper. Ladle into bowls and garnish with fresh parsley.
