Cilantro Lime Chicken
Ingredients
4 boneless, skinless chicken breasts (or thighs)
1/4 cup olive oil
Zest and juice of 2 limes
3 cloves garlic (minced)
1/4 cup fresh cilantro (chopped)
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon chili powder
Salt and pepper to taste
Directions
In a bowl, whisk together olive oil, lime zest, lime juice, garlic, cilantro, cumin, paprika, chili powder, salt, and pepper.
Place chicken in a resealable plastic bag or shallow dish and pour marinade over it.
Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
Preheat grill or grill pan to medium-high heat.
Cook chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Garnish with additional cilantro and lime wedges before serving.
