Cheesy Skillet Chicken with Roasted Potatoes

Ingredients
For the Chicken:
2 large chicken breasts
1 tsp paprika
1 tsp garlic powder
Salt and pepper to taste
2 tbsp olive oil
For the Potatoes:
3 cups baby potatoes, halved
1 tbsp olive oil
1 tsp dried rosemary
1/2 tsp garlic powder
Salt and pepper to taste
For the Cheese Sauce:
1 cup heavy cream
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 clove garlic, minced
Fresh parsley for garnish
Instructions
Prepare the Potatoes:
Preheat the oven to 400°F (200°C).
Toss baby potatoes with olive oil, dried rosemary, garlic powder, salt, and pepper. Spread them on a baking tray and roast for 20-25 minutes until golden and tender.
Cook the Chicken:
Season chicken breasts with paprika, garlic powder, salt, and pepper.
Heat olive oil in a skillet over medium heat and sear the chicken until golden brown on both sides (about 4-5 minutes per side). Remove from the skillet and set aside.
Make the Cheese Sauce:
In the same skillet, sauté minced garlic until fragrant. Stir in heavy cream and bring to a simmer.
Add mozzarella and Parmesan cheese, stirring until melted and creamy.
Assemble the Dish:
Place the chicken breasts back into the skillet, spooning the cheese sauce over the top.
Arrange the roasted potatoes around the chicken in the skillet.
Finish and Serve:
Sprinkle with freshly chopped parsley and place the skillet under the broiler for 3-5 minutes until the cheese is bubbly and golden.
