Gourmet Caramelized Onion Cheeseburger Recipe

Ingredients
For the Burger Patties:

1 lb ground beef (80/20 blend for juiciness)
Salt and freshly cracked pepper, to taste
4 slices Gruyere or Swiss cheese
For the Caramelized Onions:

2 large onions, thinly sliced
2 tbsp olive oil
1 tsp sugar
1 tbsp balsamic vinegar (optional)
Pinch of salt
For the Special Sauce:

1/4 cup mayonnaise
1 tbsp Dijon mustard
1 tbsp whole-grain mustard
1 tsp honey
For Assembly:

2 sesame brioche buns, toasted
1 tbsp butter, for toasting buns
Optional toppings: baby arugula, pickles
Instructions
Step 1: Caramelize the Onions
Heat olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt.
Cook, stirring occasionally, for 15-20 minutes until the onions soften and brown.
Stir in sugar and balsamic vinegar, cooking for an additional 2 minutes. Set aside.

Step 2: Make the Special Sauce
In a small bowl, mix mayonnaise, Dijon mustard, whole-grain mustard, and honey. Adjust seasoning to taste.

Step 3: Cook the Burger Patties
Divide ground beef into two portions and form patties slightly larger than the buns. Season generously with salt and pepper.
Heat a skillet or grill over medium-high heat. Sear patties for 3-4 minutes per side, adding cheese slices during the last minute of cooking. Cover to melt.

Step 4: Toast the Buns
Spread butter on the cut sides of the buns. Toast in a skillet until golden.

Step 5: Assemble the Burger
Spread the special sauce generously on both sides of the toasted buns.
Layer with baby arugula (if using), the cheese-topped patty, and a heaping pile of caramelized onions.
Top with the remaining bun and press gently.
