Cheesy Beef Stew with Toasted Bread
Ingredients:
For the Stew:
1 lb beef stew meat, cubed
2 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
2 carrots, chopped
2 celery stalks, sliced
3 cups beef broth
1 cup potatoes, cubed
1 tbsp tomato paste
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
For the Topping:
4 slices of crusty bread
1 cup shredded Gruyère or mozzarella cheese
Fresh thyme for garnish
Instructions:
Sear the Beef
:
Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper. Brown the beef on all sides and set aside.
Cook the Vegetables
:
In the same pot, sauté onion, garlic, carrots, and celery until softened. Stir in tomato paste and cook for 1 minute.
Simmer the Stew
:
Return the beef to the pot. Add beef broth, potatoes, thyme, and bay leaf. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours, or until the beef is tender.
Prepare the Bread
:
While the stew is simmering, toast the bread slices in a skillet or oven until golden and crispy.
Assemble and Melt Cheese
:
Preheat your oven broiler. Ladle the stew into oven-safe bowls. Place a slice of toasted bread on top of each bowl and sprinkle generously with cheese. Broil until the cheese is melted and bubbly.
Serve and Garnish
:
