Tater Tot Mac and Cheese
Ingredients:
For the Tater Tots:
1 bag frozen tater tots (about 24 oz)
For the Mac and Cheese:
8 oz elbow macaroni or pasta of choice
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
2 cups whole milk
2 tbsp butter
2 tbsp all-purpose flour
1/2 tsp garlic powder
Salt and pepper to taste
1/4 cup cooked meatballs (optional)
Fresh chives (for garnish)
Instructions:
Cook the Tater Tots:
Preheat your oven according to the instructions on the tater tot package (usually around 425°F or 220°C).
Spread the frozen tater tots on a baking sheet and bake them for the time stated on the package until they are golden brown and crispy.
Make the Mac and Cheese:
While the tater tots are cooking, cook the macaroni in salted water according to the package instructions. Drain and set aside.
In a saucepan, melt the butter over medium heat. Add the flour and whisk for about 1-2 minutes to make a roux (paste).
Slowly add the milk while whisking to prevent lumps. Cook until the mixture thickens (about 5 minutes).
Reduce the heat to low, add the shredded cheddar and mozzarella cheese, and stir until smooth and creamy. Season with salt, pepper, and garlic powder.
Assemble the Dish:
Once the tater tots are cooked and crispy, place them on a serving plate.
Pour the creamy mac and cheese over the tater tots, making sure they are well covered.
If you’re using meatballs, scatter them on top of the dish. Optionally, you can bake this in the oven for a few minutes to melt the cheese further.
Serve:
Garnish with freshly chopped chives or parsley and serve your cheesy, comforting dish hot!
