Classic French Onion Soup Recipe
Ingredients
For the Soup:
2 tbsp butter
2 tbsp olive oil
4-5 large yellow onions, thinly sliced
1 tsp salt
1 tsp sugar (to help caramelize the onions)
1/2 cup dry white wine (optional)
6 cups beef or vegetable broth
1 tsp fresh thyme leaves (or 1/2 tsp dried)
1 bay leaf
Salt and pepper to taste
For the Topping:
Baguette slices or croutons
1 1/2 cups shredded Gruyère cheese (or Swiss)
Instructions
Step 1: Caramelize the Onions
Heat butter and olive oil in a large pot over medium heat.
Add sliced onions, salt, and sugar. Stir occasionally and cook for 30-40 minutes until the onions are deep golden and caramelized.
Step 2: Deglaze and Simmer
Optional: Add white wine to deglaze the pot, scraping any browned bits from the bottom. Cook for 2-3 minutes.
Add the broth, thyme, and bay leaf. Simmer on low heat for 30 minutes. Season with salt and pepper to taste.
Step 3: Prepare the Topping
Preheat your broiler.
Toast baguette slices until golden. Sprinkle Gruyère cheese on top.
Place under the broiler for 1-2 minutes until the cheese is melted and bubbly.
Step 4: Assemble and Serve
Ladle the hot soup into oven-safe bowls.
Place the toasted baguette with melted cheese on top.
Optional: Add more shredded cheese and broil the bowls until the cheese is golden and bubbly.

For extra flavor, mix in a splash of brandy or cognac before serving.
