Cheesy Beef Burritos
Ingredients:
For the Burrito Filling:
1 lb ground beef
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 packet taco seasoning (or use your favorite homemade seasoning)
1/4 cup tomato paste
1/4 cup water
1 cup fresh spinach, chopped
1 medium tomato, diced
1 cup shredded cheese (cheddar or Mexican blend)
Salt and pepper to taste
For the Burrito:
4 large flour tortillas
Sour cream or salsa (optional)
Instructions:
Cook the Ground Beef:
In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened (about 3-4 minutes).
Add garlic and ground beef, breaking it apart with a spoon. Cook until browned, about 6-7 minutes.
Stir in the taco seasoning, tomato paste, and water. Mix well and simmer for 5-10 minutes until the mixture thickens and becomes flavorful. Season with salt and pepper.
Add Veggies and Cheese:
Stir in chopped spinach and cook for 1-2 minutes until wilted. Then add diced tomatoes and shredded cheese. Stir until the cheese melts and everything is combined.
Prepare the Tortillas:
Heat the flour tortillas in a dry skillet or microwave for a few seconds to make them more pliable.
Assemble the Burritos:
Spoon a generous portion of the beef mixture onto each tortilla.
Roll up the tortilla tightly, folding in the sides to keep the filling inside.
Toast the Burritos:
In the same skillet, place the burritos seam side down and cook for 2-3 minutes on each side until crispy and golden brown.
Serve:
Serve with sour cream or salsa on the side for dipping, if desired.
