2 tbsp Cooking Oil
4 Large Bell Peppers
225g Halloumi Cheese
200g Cooked White Rice
1 Red Onion
3 Garlic Cloves
1 Courgette
100g Mushrooms
1 tbsp Dried Mixed Herbs
Salt and Pepper
400g Chopped Tomatoes
3 tbsp Parmesan Cheese
Directions:
1. Preheat oven to 180°C. Roast peppers for 5-10 min.
2. Fry garlic, onion, courgette, mushrooms, and halloumi.
3. Add tomatoes, herbs, and rice. Fill peppers and bake 20 min.
