Loaded Rice Bowl with Beef, Corn, Cheese, and Sour Cream
Ingredients:
For the Beef:
1 lb ground beef
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
Salt and pepper, to taste
For the Rice:
1 cup rice
2 cups water
Salt, to taste
For the Toppings:
1/2 cup corn kernels (fresh or frozen)
1/2 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup green onions, chopped
1/2 cup lettuce, shredded
Tortilla chips
Instructions:
Cook the Rice:
Rinse the rice under cold water until the water runs clear.
In a pot, bring 2 cups of water to a boil, add the rice and a pinch of salt. Cover, reduce heat, and simmer for 15-20 minutes until tender.
Once done, fluff the rice with a fork and set aside.
Cook the Beef:
In a skillet, heat olive oil over medium heat.
Add the ground beef and cook until browned, breaking it up as it cooks.
Season with garlic powder, onion powder, cumin, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes.
Prepare the Toppings:
If using frozen corn, heat it in the microwave or sauté it in a pan for a few minutes.
Shred the lettuce and chop the green onions.
Assemble the Bowl:
Start by placing a layer of rice at the bottom of your serving bowl.
Top with the seasoned beef, followed by corn, shredded cheddar cheese, sour cream, green onions, and shredded lettuce.
Add a side of tortilla chips for a crunchy finish.
