Creamy Spinach Chicken Meatballs

Ingredients:
1 lb ground chicken

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic (minced)

Salt & pepper to taste

2 cups fresh spinach (chopped)

1 cup heavy cream

1/2 cup shredded mozzarella

2 tbsp olive oil

Instructions:
Prepare the Meatballs:
In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Form into meatballs.

Cook the Meatballs:
Heat olive oil in a pan over medium heat. Cook meatballs until golden-brown on all sides and fully cooked through. Set aside.

Make the Sauce:
In the same pan, sauté spinach until wilted. Add heavy cream and shredded mozzarella, stirring until melted and creamy. Season with salt and pepper.

Combine:
Add the meatballs back to the pan, coating them in the sauce. Simmer for 2-3 minutes.

Serve:
Garnish with fresh herbs
and serve warm with pasta, rice, or crusty bread
.
