Recipes:

For the Bake:
1 cup orzo pasta
2 cups fresh baby spinach, chopped
1 cup canned or jarred artichoke hearts, drained and chopped
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup milk (or heavy cream for a richer bake)
2 cloves garlic, minced
1 tbsp olive oil
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
1/4 cup breadcrumbs (optional, for a crispy topping)
Directions:
Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
Cook orzo according to package instructions until al dente. Drain and set aside.
In a large bowl, mix cooked orzo, spinach, artichoke hearts, ricotta, mozzarella, Parmesan, milk, garlic, olive oil, oregano, salt, black pepper, and red
pepper flakes. Stir until well combined.
Transfer the mixture to the prepared baking dish and spread evenly.
If using, sprinkle breadcrumbs over the top for added crunch.
Bake for 20-25 minutes, or until bubbly and golden brown on top.
Remove from oven, let cool slightly, and serve warm. Enjoy!
