Recipes:
4 medium zucchini, halved lengthwise and scooped out
1 tbsp olive oil
1 cup mushrooms, finely chopped
2 cups fresh spinach, chopped
1 clove garlic, minced
1 cup ricotta cheese
¼ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
½ tsp dried oregano
½ tsp salt
¼ tsp black pepper
½ cup marinara sauce
Directions:
Preheat your oven to 375°F (190°C) and grease a baking dish.
Heat olive oil in a skillet over medium heat. Add mushrooms and cook for 3-4 minutes until softened.
Add spinach and garlic, stirring until spinach is wilted. Remove from heat and let cool slightly.
In a bowl, mix ricotta, Parmesan, oregano, salt, and black pepper. Stir in the spinach and mushroom mixture.
Fill each zucchini half with the ricotta mixture and place them in the baking dish.
Spoon a little marinara sauce over each zucchini boat and top with shredded mozzarella.
Bake for 20-25 minutes, or until the zucchini is tender and the cheese is golden and bubbly.
Let cool slightly before serving.
