Italian Lentil Soup (Zuppa di Lenticchie)
This hearty Italian Lentil Soup, also known as Zuppa di Lenticchie, is a traditional dish that’s both nutritious and comforting. 3 tbsp extra virgin olive oil
1 medium onion, diced
1 large carrot, diced
2 celery ribs, diced
3 garlic cloves, chopped
1 cup dried brown lentils
400g crushed tomatoes
5 ½ cups vegetable stock
Parmesan rind (optional)
¼ tsp red chili flakes
1 ½ tsp dried basil
1 ½ tsp dried oregano
1 tsp fresh rosemary, chopped
Salt & pepper to taste
To serve: chopped parsley, grated Parmesan, olive oil
Directions:
1. Sauté onion, carrot, and celery in olive oil for 5 mins.
2. Add garlic; sauté 1 min.
3. Add lentils, tomatoes, stock, herbs, and Parmesan rind.
4. Simmer for 30-40 mins.
5. Stir in parsley, serve with Parmesan and olive oil.
