6-8 oz maplewood smoked bacon, chopped
5-6 cabbage wedges
1 cup heavy cream
1 cup Gruyere cheese, grated
Salt and pepper to taste
Fresh thyme

Directions:
1. Preheat the oven to 400°F.
2. Cook bacon in a cast iron skillet until the fat renders. Remove bacon, leaving drippings.
3. Sear cabbage wedges in the skillet for 5 minutes per side until charred.
4. Pour heavy cream over cabbage, sprinkle with bacon, season with salt, pepper, and thyme. 5. Top with Gruyere.
6. Bake for 20 minutes or until bubbly and golden.
