Mediterranean Chickpea Salad
Ingredients
1 can (15 oz) chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup crumbled feta cheese
1 tbsp olive oil
Juice of 1 lemon
1 tsp dried oregano
Salt and black pepper to taste
Directions
In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, and parsley. Toss well.
Drizzle olive oil and lemon juice over the salad. Sprinkle with oregano, salt, and black pepper. Mix until well combined.
Top with crumbled feta cheese.
Serve immediately with a wedge of lemon for extra zing, or refrigerate for up to 1 day. Enjoy!
