Creamy Chicken Noodle Soup

Ingredients

2 tbsp butter
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 lb chicken breast, cubed or shredded
6 cups chicken broth
1 tsp dried thyme
1/2 tsp dried parsley
1/4 tsp black pepper
8 oz spaghetti or egg noodles, broken in half
1 cup heavy cream
2 tbsp all-purpose flour
Salt to taste
Directions

Sauté veggies: Melt butter in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook until softened (about 5 minutes).
Add chicken and seasonings: Stir in chicken, thyme, parsley, and black pepper. Cook for 3-4 minutes.
Add broth and noodles: Pour in chicken broth and bring to a boil. Add noodles and cook for 10 minutes, or until tender.
Thicken with cream: Whisk flour into heavy cream until smooth. Stir into the soup and simmer for 5 minutes until thickened.
Adjust seasoning: Add salt to taste. Garnish with fresh parsley and serve hot!
