Chicken Souvlaki Recipe
Ingredients:
1 ½ lbs chicken breast or thighs, cut into bite-sized cubes
3 tbsp olive oil
3 tbsp lemon juice (freshly squeezed)
3 cloves garlic, minced
1 tbsp dried oregano
1 tsp dried thyme (optional)
1 tsp salt
½ tsp black pepper
Wooden or metal skewers
Instructions:
Prepare the Marinade:
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
Marinate the Chicken:
Add the chicken cubes to the marinade and mix to coat evenly.
Cover and refrigerate for at least 1 hour (or up to overnight for deeper flavor).
Skewer the Chicken:
Thread the marinated chicken pieces onto the skewers.
Grill the Souvlaki:
Preheat the grill to medium-high heat.
Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
Serve:
Garnish with fresh parsley and a squeeze of lemon juice.
Pair with tzatziki sauce, pita bread, and a fresh Greek salad.
