Hearty Ground Beef and Vegetable Stew

Ingredients

1 lb ground beef
1 tbsp olive oil
1 medium onion, diced
2 carrots, sliced
2 celery stalks, diced
2 potatoes, diced
1 cup frozen peas
3 garlic cloves, minced
4 cups beef broth
1 can (14 oz) diced tomatoes
2 tbsp tomato paste
1 tsp dried thyme
1/2 tsp smoked paprika
1/4 tsp ground black pepper
Salt to taste
Fresh dill or parsley, chopped (for garnish)
Directions

Brown the beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Remove excess fat if needed.

Sauté aromatics: Add onion, garlic, carrots, and celery to the pot. Cook for 5 minutes, stirring occasionally, until softened.

Add broth and potatoes: Stir in beef broth, diced tomatoes, tomato paste, thyme, smoked paprika, and black pepper. Add diced potatoes. Bring to a boil, then reduce heat to a simmer and cook for 25 minutes, or until the potatoes are tender.

Add peas: Stir in the frozen peas and cook for another 5 minutes until warmed through. Adjust seasoning with salt and pepper as needed.

Serve: Ladle into bowls, garnish with fresh dill or parsley, and enjoy warm.
