Creamy Chicken Mushroom Pasta
Ingredients
For the Chicken and Pasta:
1 lb (450g) penne or your favorite pasta
2 tbsp olive oil or butter
1 lb (450g) chicken breast, sliced into strips
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
For the Creamy Mushroom Sauce:
2 tbsp unsalted butter
8 oz (225g) mushrooms, sliced
3 cloves garlic, minced
1/4 cup white wine or chicken broth (optional, for deglazing)
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
1/4 tsp nutmeg (optional, for added depth)
Salt and pepper to taste
For Garnish:
Fresh parsley, chopped
Extra grated Parmesan cheese
Instructions
Cook the Pasta:
Boil a large pot of salted water and cook pasta according to package instructions. Drain and set aside.
Cook the Chicken:
In a large skillet, heat olive oil or butter over medium heat.
Season the chicken strips with garlic powder, salt, and pepper.
Cook the chicken for 4–5 minutes on each side, until golden brown and fully cooked. Remove and set aside.
Sauté the Mushrooms:
In the same skillet, melt the butter and add the sliced mushrooms.
Cook for 4–5 minutes until the mushrooms are golden and tender. Add minced garlic and cook for 1 minute.
Optional: Deglaze the pan with white wine or chicken broth, scraping the brown bits for flavor.
Make the Cream Sauce:
Stir in the heavy cream, chicken broth, Parmesan cheese, Italian seasoning, and nutmeg.
Let the sauce simmer gently for 5–7 minutes until it thickens. Season with salt and pepper to taste.
Combine:
Add the cooked pasta and chicken back into the skillet with the creamy mushroom sauce.
Toss everything together until well coated.
Serve:
Garnish with fresh parsley and extra Parmesan cheese. Serve warm with garlic bread or a side salad.
