Pineapple Coconut Fluff Salad
Ingredients
1 can (20 oz) crushed pineapple, drained
1 cup fresh pineapple chunks (optional for garnish)
1 cup sweetened shredded coconut
1/2 cup toasted coconut flakes (for topping)
1 cup mini marshmallows
1 container (8 oz) whipped topping (like Cool Whip), thawed
1/2 cup sour cream or plain Greek yogurt
1/4 cup chopped pecans (optional)
Fresh mint leaves and berries for garnish
Directions
Mix the Base: In a large bowl, gently fold together the whipped topping and sour cream (or Greek yogurt) until smooth.
Add Ingredients: Stir in drained crushed pineapple, shredded coconut, mini marshmallows, and chopped pecans (if using). Mix until evenly combined.
Chill: Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
Garnish & Serve: Before serving, top with fresh pineapple chunks, toasted coconut flakes, a sprinkle of mini marshmallows, fresh mint, and a raspberry for color.
