Garlic Butter Shrimp Scampi
Ingredients
8 oz (225g) linguine or spaghetti
1 lb (450g) large shrimp, peeled and deveined
3 tbsp unsalted butter
2 tbsp olive oil
4 cloves garlic, minced
1/4 tsp red pepper flakes (optional)
1/4 cup dry white wine or chicken broth
Juice of 1 lemon
2 tbsp fresh parsley, chopped
Salt and pepper, to taste
Grated Parmesan cheese, for garnish
Directions
Cook the Pasta: Boil linguine in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
Sauté Shrimp: Heat olive oil in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2 minutes per side or until pink. Remove and set aside.
Make the Garlic Butter Sauce: In the same skillet, melt butter. Add minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
Add Wine & Lemon: Stir in white wine (or broth) and lemon juice. Let it simmer for 2-3 minutes until slightly reduced.
Combine Everything: Add cooked pasta and shrimp back to the skillet. Toss to coat. If needed, add reserved pasta water a little at a time to loosen the sauce.
Garnish & Serve: Sprinkle with fresh parsley and grated Parmesan. Serve warm!
