Southwest Chicken Wraps
Ingredients
2 cups shredded rotisserie chicken
1 cup black beans, rinsed and drained
1 cup corn kernels (fresh, frozen, or canned)
1 medium tomato, diced
1/4 red onion, diced
1/4 cup chopped fresh cilantro
1/2 tsp chili powder
1/2 tsp cumin
Juice of 1 lime
4 large flour tortillas
Optional toppings: shredded cheese, sour cream, salsa, or guacamole
Directions
Prepare the Filling:
In a large bowl, mix the shredded chicken, black beans, corn, tomato, red onion, cilantro, chili powder, cumin, and lime juice. Season with salt and pepper to taste.
Warm the Tortillas:
Heat the tortillas in a dry skillet for 20–30 seconds on each side to make them pliable.
Assemble the Wraps:
Spoon the chicken mixture onto the center of each tortilla. Add optional toppings like shredded cheese, sour cream, or guacamole for extra flavor.
Wrap & Serve:
Fold in the sides of the tortilla, then roll tightly into a wrap. Slice in half and serve immediately.
