Italian Sausage Soup
Ingredients
1 lb Italian sausage (mild or spicy)
1 tablespoon olive oil
1 medium onion (chopped)
2 carrots (sliced)
2 celery stalks (chopped)
3 cloves garlic (minced)
1 zucchini (diced)
1 can (28 oz) crushed tomatoes
6 cups chicken broth
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
2 cups rotini or other pasta
2 cups kale or spinach (chopped)
Salt and pepper to taste
Fresh basil or Parmesan cheese (for garnish)
Directions
Heat olive oil in a large pot over medium heat.
Cook the sausage, breaking it into crumbles, until browned. Remove and set aside.
Add onion, carrots, celery, and garlic to the pot. Sauté for 5-7 minutes until softened.
Stir in crushed tomatoes, chicken broth, basil, oregano, and red pepper flakes. Bring to a boil.
Add zucchini and browned sausage. Reduce heat and simmer for 15 minutes.
Add pasta and cook until tender (about 10 minutes).
Stir in kale or spinach and cook for an additional 2-3 minutes.
Season with salt and pepper to taste. Garnish with fresh basil or Parmesan cheese before serving.
