Oven-Roasted Sweet Potatoes & Onions
Ingredients
2 large sweet potatoes, peeled and cubed
1 large onion, sliced into wedges
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp ground cumin
Salt and black pepper to taste
Directions
Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.
Season the Veggies: In a large mixing bowl, toss the sweet potatoes and onion wedges with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper until evenly coated.
Spread on Baking Sheet: Arrange the seasoned sweet potatoes and onions in a single layer on the prepared baking sheet. Avoid overcrowding for even roasting.
Roast: Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and slightly caramelized, and the onions are golden.
Serve: Remove from the oven and serve warm as a side dish with your favorite protein or as part of a grain bowl.
