Cheesy Roasted Brussels Sprouts
Ingredients
1 lb Brussels sprouts (trimmed and halved)
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper (to taste)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Directions
Preheat oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Brussels sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
Roast: Spread the Brussels sprouts cut-side down on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until golden and crispy.
Add the cheese: Sprinkle the mozzarella and Parmesan cheese over the roasted Brussels sprouts. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve: Remove from the oven and serve hot as a delicious side dish or appetizer!
