Creamy Spicy Sesame Carrot Soup
Ingredients
For the Soup:
1 tablespoon sesame oil
1 medium onion, chopped
3 garlic cloves, minced
1 tablespoon fresh ginger, minced
1 pound (about 5 medium) carrots, peeled and sliced
4 cups vegetable broth
1 cup coconut milk
1 teaspoon sriracha (or more, to taste)
1 teaspoon soy sauce
For Garnish:
1 tablespoon toasted sesame seeds (black and white mix)
Fresh cilantro leaves
Drizzle of sesame oil or sriracha
Instructions
Sauté the Base:
Heat sesame oil in a large pot over medium heat.
Add onion, garlic, and ginger, and sauté until fragrant and softened (about 3-4 minutes).
Cook the Carrots:
Add the sliced carrots and sauté for 2-3 minutes.
Pour in the vegetable broth and bring to a boil.
Lower the heat and simmer for 20 minutes, or until carrots are tender.
Blend the Soup:
Use an immersion blender (or transfer to a regular blender) to purée the soup until smooth and creamy.
Add Coconut Milk:
Stir in the coconut milk, sriracha, and soy sauce.
Simmer for an additional 5 minutes to combine flavors.
Serve:
Ladle the soup into bowls.
Garnish with sesame seeds, fresh cilantro, and a drizzle of sesame oil or sriracha.
