6 Tbsp butter
1 cup yellow onion, finely chopped
1 large garlic clove, minced
1/4 cup + 3 Tbsp flour
3 1/4 cups low-fat milk
1 (14.5 oz) can chicken broth
1/2 cup heavy cream
3 cups broccoli florets, finely chopped
10 oz sharp cheddar cheese, shredded
1 oz Parmesan cheese, shredded
Salt & pepper to taste

Directions:
1. Melt butter in a pot. Sauté onions until soft, add garlic & flour, cook 1 min.
2. Gradually add milk & broth while whisking, stir in broccoli.
3. Cook until thickened; reduce heat, cook until broccoli is tender.
4. Off heat, stir in cream & cheeses until melted. Season to taste.
