White Chocolate Cranberry Cookies
Ingredients
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup dried cranberries
1/2 cup white chocolate chips (plus extra for topping)
Directions
Preheat the Oven: Preheat to 350°F (175°C). Line a baking sheet with parchment paper.
Cream the Butter & Sugars: In a large bowl, beat together the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
Mix Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until combined.
Add the Goodies: Gently fold in the dried cranberries and white chocolate chips.
Scoop & Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Top with extra cranberries and white chocolate chips. Bake for 9–11 minutes, or until the edges are golden but the centers are soft.
Cool & Serve: Allow cookies to cool on the pan for 5 minutes, then transfer to a wire rack. Enjoy warm or store in an airtight container.
