Classic Thumbprint Cookies
Ingredients
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg yolk
1 tsp vanilla extract
2 cups all-purpose flour
1/4 tsp salt
1/3 cup jam (raspberry, strawberry, or your favorite flavor)
Chopped nuts (optional, for garnish)
Directions
Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream the butter and sugars: In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing well.
Add dry ingredients: Gradually mix in the flour and salt until the dough comes together.
Form the cookies: Roll the dough into 1-inch balls and place them on the baking sheet about 2 inches apart.
Make the thumbprints: Use your thumb (or the back of a teaspoon) to gently press a small indent into the center of each dough ball.
Fill with jam: Spoon a small amount of jam into each indent. Don’t overfill, as it may overflow during baking.
Bake: Bake for 12-15 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Garnish (optional): Sprinkle with chopped nuts for an extra crunch.
