Whipped Feta with Roasted Chickpeas & Tomatoes

Ingredients

8 oz feta cheese (crumbled)
4 oz cream cheese (softened)
2 tbsp olive oil (divided)
1 cup cherry tomatoes
1/2 cup canned chickpeas (drained and rinsed)
1 garlic clove (minced)
1/2 tsp smoked paprika
Fresh oregano (for garnish)
Salt and pepper (to taste)
Directions

Whip the feta: In a food processor, blend the feta cheese, cream cheese, and 1 tbsp olive oil until smooth and creamy. Set aside.
Roast the toppings: Preheat a skillet over medium heat. Add 1 tbsp olive oil, cherry tomatoes, chickpeas, garlic, smoked paprika, salt, and pepper. Sauté for 6-8 minutes, stirring occasionally, until the tomatoes blister and the chickpeas are golden.
Assemble: Spread the whipped feta onto a serving dish. Top with the warm roasted tomatoes and chickpeas.
Garnish and serve: Drizzle with olive oil, sprinkle with fresh oregano, and serve with pita bread or crackers.
