Creamy Tuscan Chicken

Ingredients

2 large chicken breasts
2 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper (to taste)
3 garlic cloves (minced)
1/2 cup sun-dried tomatoes (chopped)
1/2 cup artichoke hearts (quartered)
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 tsp red pepper flakes (optional)
Fresh parsley (chopped, for garnish)
Directions

Season and sear the chicken: Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.

Sauté the aromatics: In the same skillet, lower the heat to medium. Add minced garlic and sauté until fragrant, about 1 minute.

Add vegetables: Stir in sun-dried tomatoes, artichoke hearts, and spinach. Cook for 2-3 minutes until spinach wilts.

Make the creamy sauce: Lower the heat and stir in heavy cream, Parmesan cheese, and red pepper flakes. Simmer for 2-3 minutes until the sauce thickens slightly.

Return chicken to the skillet: Place the chicken back into the skillet, spooning the sauce over the top. Cover and cook for 5-7 minutes, or until the chicken is fully cooked (internal temp of 165°F/74°C).

Serve: Garnish with fresh parsley and serve with rice, pasta, or crusty bread to soak up the delicious sauce!
