Mediterranean Meatball Bowls

Ingredients

For the Meatballs:

1 lb ground chicken or turkey
1/3 cup breadcrumbs
1 egg, lightly beaten
2 tbsp parsley, chopped
1 tbsp dill, chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp smoked paprika
Salt and pepper to taste
For the Bowls:

2 cups cooked turmeric rice or plain rice
1 cup cherry tomatoes, halved
1 cup cucumber slices
1/4 cup crumbled feta cheese
Fresh parsley for garnish
For the Tzatziki Sauce:

1 cup Greek yogurt
1/2 cucumber, grated and squeezed to remove water
1 garlic clove, minced
1 tbsp olive oil
1 tbsp fresh dill, chopped
1 tbsp lemon juice
Salt and pepper to taste
Directions

Make the Meatballs: Preheat oven to 400°F (200°C). In a large bowl, mix ground chicken, breadcrumbs, egg, parsley, dill, garlic, cumin, paprika, salt, and pepper. Form into 1-inch meatballs and place on a baking sheet. Bake for 18-20 minutes, or until golden and cooked through.

Prepare the Tzatziki Sauce: In a small bowl, mix Greek yogurt, grated cucumber, garlic, olive oil, dill, lemon juice, salt, and pepper. Refrigerate until ready to use.

Assemble the Bowls: Divide the rice among serving bowls. Top with meatballs, cherry tomatoes, cucumber slices, and crumbled feta. Add a dollop of tzatziki sauce on the side.

Garnish and Serve: Sprinkle with fresh parsley and enjoy!
