Creamy Seafood Chowder Recipe

Ingredients:

1 lb shrimp, peeled and deveined
1 lb sea scallops
2 tbsp butter
1 onion, diced
2 celery stalks, chopped
2 carrots, sliced
3 garlic cloves, minced
3 cups chicken broth or seafood stock
3 cups potatoes, diced
1 cup corn kernels (fresh or frozen)
2 cups heavy cream
1 tsp Old Bay seasoning
1 tsp thyme
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions:

Sauté the Vegetables:

In a large pot, melt butter over medium heat.
Add onion, celery, and carrots. Cook until soft, about 5-7 minutes.
Stir in garlic and cook for another minute.
Simmer the Base:

Pour in the broth and bring to a boil.
Add potatoes, thyme, and Old Bay seasoning.
Reduce heat and simmer until potatoes are tender, about 15 minutes.
Add Seafood and Cream:

Stir in the shrimp, scallops, and corn.
Pour in the heavy cream.
Simmer gently for 5-7 minutes, until seafood is cooked through.
Season and Serve:

Season with salt and pepper to taste.
Garnish with fresh parsley and serve hot with crusty bread.

Cook Time: 30 minutes
