Garlic Parmesan Orzo with Baby Spinach & Basil

Description

1 package store-bought flatbread or pizza dough
1 tbsp olive oil
2 large onions, thinly sliced
2 tbsp balsamic vinegar
1 tbsp honey or maple syrup
½ cup ricotta cheese
¼ cup fresh cranberries, chopped (or dried cranberries)
1 tsp fresh thyme leaves
Salt and black pepper, to taste
1 tbsp fresh parsley, chopped (for garnish)
Directions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Heat olive oil in a large pan over medium heat. Add the sliced onions and cook for 10-15 minutes, stirring occasionally, until caramelized.
Add balsamic vinegar and honey to the onions and stir, cooking for an additional 2 minutes until the sauce thickens. Remove from heat.
Roll out the flatbread or pizza dough onto the prepared baking sheet. Spread a thin layer of ricotta cheese over the dough.
Evenly distribute the caramelized onions over the ricotta, followed by chopped cranberries and fresh thyme leaves. Season with salt and black pepper.
Bake in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
Remove from the oven and garnish with fresh parsley before serving. Enjoy!
