1 lb fresh okra, trimmed and halved lengthwise
1 tbsp olive oil
½ tsp garlic powder
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes (optional)
½ tsp lemon zest (optional, for extra freshness)
Directions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a bowl, toss the okra with olive oil, garlic powder, smoked paprika, salt, black pepper, and red pepper flakes if using.
Spread the seasoned okra in a single layer on the prepared baking sheet.
Roast for 15-18 minutes, flipping halfway through, until the okra is golden brown and crispy on the edges.
Remove from the oven and sprinkle with lemon zest if desired.
Serve warm and enjoy as a side dish or snack.
