Mediterranean Chickpea Salad

Description

2 cups cherry tomatoes, halved
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried oregano
1 ball burrata cheese
2 tablespoons balsamic glaze
¼ cup fresh basil leaves, torn
1 small baguette, sliced and toasted
Directions:
Preheat oven to 400°F (200°C).
Toss cherry tomatoes with olive oil, salt, black pepper, and oregano. Spread on a baking sheet and roast for 15-20 minutes, until soft and slightly caramelized.
Place the burrata on a serving plate and arrange the roasted tomatoes around it.
Drizzle with balsamic glaze and sprinkle with fresh basil leaves.
Serve immediately with toasted baguette slices.
