8 lasagna noodles, cooked and drained
1 tablespoon olive oil
2 cups mushrooms, finely chopped
2 cups fresh spinach, chopped
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese, divided
1 egg
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups marinara sauce
Directions:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
In a large pan, heat olive oil over medium heat. Add mushrooms and cook until tender, about 5 minutes. Add spinach and cook for another 2 minutes until wilted.
Remove from heat and let cool slightly.
In a mixing bowl, combine ricotta cheese, Parmesan cheese, 1/2 cup mozzarella cheese, egg, garlic powder, salt, and pepper. Stir in the cooked mushrooms and
spinach.
Lay the cooked lasagna noodles flat. Spread an even layer of the ricotta mixture onto each noodle. Carefully roll each noodle and place seam-side down in the
prepared baking dish.
Pour marinara sauce over the lasagna rolls and sprinkle with the remaining mozzarella cheese.
Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted and bubbly.
Remove from oven and let rest for 5 minutes before serving.
